Day 1: Chocolate Cupcakes with Peppermint Frosting


Welcome to our Christmas treats countdown!! We are so excited to bring you 12 delicious recipes that we enjoy during the holiday season. We will be posting a new recipe each morning. We hope you enjoy these treats as much as we enjoyed making them:-)

To kick us off, we made chocolate cupcakes with peppermint frosting. I was perusing Pinterest (The Party Dress) the other week and saw this recipe for peppermint frosting. What goes with peppermint? Chocolate of course!

Chocolate Cupcakes Recipe:
1 C. brown sugar
1/2 C butter
2 large eggs
1 1/4 C flour
1/2 C unsweetened cocoa
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 C buttermilk*
1 tsp vanilla extract
*If you do not have butter milk put 1 tsp. white vinegar in a 1/2 C measuring cup and fill the rest up with milk

Pre-heat oven to 350 and line muffin tin with cupcake liners.

Cream butter and brown sugar. Add eggs mixing each in one at a time.
 In a separate bowl, add the dry ingredients together. Add half of the dry mixture to the batter. Mix well. Add the buttermilk and mix well. Mix the remaining dry mixture until fully incorporated in the batter. Fold in vanilla extract.

 Using a spoon or an ice creams scoop, pour batter into cupcake liners. Bake at 350 degrees for 12 minutes. Use the toothpick method to make sure cake is baked all the way through.

 Cool cupcakes on a wire rack and start on the frosting.


Peppermint Frosting recipe:
3 C. powdered sugar, sifted
1/2 C crushed peppermint
1/2 C butter, room temperature
3 oz. cream cheese, room temperature
3-4 Tbls Milk

With an electric mixer, cream the butter and cream cheese. Add powdered sugar one cup at a time. Incorporate milk as needed. Fold in peppermint frosting.


 Once your cupcakes fully cooled, frost them to your hearts delight:-)
 We had these cupcakes for dessert after Sunday dinner. They were a hit! I loved the settleness of the chocolate cupcakes that really helped the frosting shine.
